Japanese Cheesecake - RECIPE





Once upon a time there's only LEMON SQUARE CHEESECAKE here in the Philippines, now there's too many to mention... Lol!


One of the newest food trend in the Philippines now is JAPANESE CHEESECAKE. Only 2 stores are selling this as of this writing.

1. Kumori
2. Uncle Tetsu


I've tried both and they are actually different from each other. Kumori is more custardy while Uncle Tetsu is more like a very smooth and heavy mamon.

Both are really yummy.

And because of this i thought why not try baking it. I saw this recipe from runawayrice and here it is;




Ingredients:

Cream cheese mix:
8 oz cream cheese
1/4 cup butter
1/2 cup milk
5 egg yolks
1/4 cup sugar
1 tbsp calamansi juice
1/4 all purpose flour
2 tbsp cornstarch

Meringue: 
5 egg whites
1/4 tsp cream of tartar
1/4 cup sugar

1. Pre-heat oven to 150 C.
2. Line your pan with parchment paper.
3. In a bowl, combine your softened cream cheese and milk.
4. Once mixture is smooth add in your softened butter, sugar, calamansi juice and mix until well combined.
5. Sift your all purpose flour and cornstarch and mix until no lumps.
6. Then add in your yolks and mix.
7. Strain your cream cheese mixture in to another bowl for a smoother texture and set a side.
8. Beat your egg whites until frothy.
9. Add in cream of tartar and whisk until foamy.
10. Gradually add in your sugar and whisk until soft peaks.
11. In your cream cheese mixture, add in 1/3 of your meringue and fold. Do this until all meringue mixture are incorporated.
12. Pour in your cheesecake mixture to your pan.
13. Bake for an hour - bain marie style.
14. Turn off oven, with door slightly open and let the cake cool for another hour.
15. Transfer to a plate and let it cool for an hour.
16. Chill in the refrigerator for 4 hours.
17. Enjoy! 😋



First time to make this and I loved it! But i'll exclude the calamansi juice next time.

The calamansi juice gave the cheesecake a sour taste.

I think it'll be better without it. Or i think since calamansi is more sour than a lemon i should have put only half of it.

The original recipe calls for lemon juice.
