My version of Max's Fried Chicken

So i was craving for Max's Fried Chicken and i thought why not try to mimic that famous, tasty and sarap to the bones chicken of Max's Restaurant.

What makes Max's Fried Chicken (for me) is that its really tasty even without sauce or gravy. And its very crispy.

I wasn't surprise that there are other people who tried recreating this chicken.

Ingredients:

1 whole chicken
Salt
1/2 cup Patis (fish sauce) for the steam
2 tbspn for the rub
1/2 tsp. Ground black pepper
3-4 cups Water
4 cloves of Garlic (crushed)
1 tbspn. Margarine
Cooking oil for deep frying

Cooking procedure:



1. Wash your chicken.
2. Rub chicken with salt (be generous), put garlic and margarine inside the chicken and let it sit for 15-20 mins.
3. In a steamer, combine water, patis and black pepper.
4. Bring it to a boil.
5. Put your chicken in the steamer and cover. (Put more water if needed)
6. Steam for 20 mins.



7. Remove your chicken and let it cool.
8. Rub 2 tbspn of patis to your chicken and chill your chicken in the refrigerator.
9. Deep fry your chicken in medium heat for 10 mins or until golden brown.
If only half of your chicken is covered with oil - make sure to cook both side.






10. Drain excess oil.
11. Let it cool down and refrigerate.
12. Before serving, heat your cooking oil and deep fry again your chicken for 3-5mins.



13. Drain excess oil.
14. Serve and enjoy your own version of Max's Fried Chicken.



Optional:
Serve with Kamote Fries and Jufran Banana Ketchup
